La catalasa es una enzima presente en todos los tejidos vivos que cataliza la descomposición del peróxido de hidrógeno o agua oxigenada (H2 02 ) en agua más oxígeno. Si vertemos agua oxigenada en una patata cruda observaremos como burbujea. Si realizamos la misma prueba en una patata cocida no observaremos ningún acontecimiento.
