the molecules are similar to the molecules of a cellular membrane, and do the same thing, meaning that one end (the "head") is attracted to water, while the other (the "tail") is afraid of it, and so attaches to anything else, including the germ infested dirt trying to enter our skin. since the "head" is attracted to water, it follows it down the drain when we rinse off the soap.
