Using either a food-service establishment where you work or whose manager you have interviewed, or a fictional food-service establishment that you create, take on the role of food-service manager and role-play an inspection. Search the web for a current food service inspection checklist or use the FDA Food Code to complete this project.

Create a document that first describes:

the type of facility you are managing (fast food, institution, fine dining, family restaurant, etc.);
the size of the facility;
the number of employees;
the type of food served; and
typical customers.
