Bile is the substance secreted by the gall bladder to aid the break down of fats into an emulsion. Bile is not an enzyme. It only causes the fat to emulsify. In this experiment, you will use soap to break up the oil.
In this experiment, you will observe the emulsification of fat in milk. This is a model of how bile emulsifies fat in your digestive system. The soap is used in place of bile.
