How can you get fat from eating too many carbohydrates

Simple carbohydrates spike insulin levels because they are easily processed by the body, and thus they are stored in the body as fat.

Complex carbohydrates take a longer time for the body to process and don't spike insulin levels as much. Thus, they are not as easily stored as fat.
