Perform an online or offline search and choose a dine-in service restaurant in your city. You will contact the restaurant, study their website or other online information (such as reviews), and make an appointment to meet with the restaurant manager or executive chef. You will need to study food sanitation practices and restaurant safety guidelines before visiting the restaurant. Request a tour of the restaurant and conduct a brief interview with the restaurant manager. If you are unable to tour the restaurant or get an interview, then visit a quick-service restaurant and conduct an observation of it. You can also contact a hotel that has a restaurant on site. Hotels are usually more open to providing tours and participating in interviews. Write a brief essay regarding the restaurant. The essay should include a summary of your findings that covers six or more of the following points:

• your impression of how well the kitchen personnel understand how to prepare menu items and what ingredients to use
• the kitchen staff’s familiarity with the six basic nutrients
• the restaurant’s willingness to make substitutions for menu items or ingredients to help guests with nutritional or other dietary concerns
• some of the biggest dietary concerns in the past five years that affected the restaurant
• the restaurant’s efforts to learn about customer reactions to menu items
• the kitchen staff’s interpretation of the Recommended Dietary Allowances (RDAs)
• the kitchen tools and equipment used at the facility
• safety practices you observed at the restaurant
• the hygiene standards that seem important to the restaurant
• the kitchen staff’s willingness to follow safety and sanitation standards
• any obvious policies regarding safety and sanitation procedures
• certification in first aid and/or CPR
• schedule for conducting sanitation and safety meetings
• reporting structure when there is an accident or illness
