Chef a and chef b are discussing roasting a turkey. chef a says it's necessary to truss the turkey to give it a smooth, compact shape and to it cook evenly and retain moisture. chef b says it's necessary to truss the turkey only to with its shape, not to aid in cooking evenly or retaining moisture. who is correct?
